Eighteen seats around a hearth, one Michelin star, hidden behind a shop
Opened in October 2019 and now carrying a Michelin star plus a Green Star, this is a counter for eighteen people set behind the Free Market shop on the Dairy Block. Chef Byron Gomez, who cooked at Eleven Madison Park, runs a multi-course menu built around an oak fire that stays lit through service, a serious fermentation program, and Costa Rican, Nordic and Japanese threads. You watch every plate being finished a few feet away. Reservations are released in advance and the room is small enough that they matter.
Why go. One of very few places in Denver where the cooking happens at arm's length for the whole meal.
Book well ahead through the website; there is no walking in, and the last seating is early by tasting-menu standards.
