JINYA Ramen Bar
Reliable late-ish ramen across the plaza from the train hall
A branch of the Los Angeles ramen chain, sitting on Wynkoop directly across from Union Station. The broths simmer in house for twenty hours, and the ordering is build-your-own down to noodle thickness and richness, which is either the appeal or the annoyance depending on your mood. Vegan and vegetarian bowls are on the menu alongside a halal chicken ramen. It is not the most interesting ramen in Denver, but it is open until ten or eleven and it is fifty feet from a train, which counts for something.
Why go. A hot bowl within sight of the platform when you have a train to catch or one just got in.
Sit at the bar if you are alone; the dining room fills fast on Rockies nights and the wait jumps.
