Corsica Wine Bar

The conceit is the island of Corsica, which sits between France and Italy and cooks like both, so the plates run from tuna carpaccio to nduja-stuffed dates to squash risotto. The reason to care is the wine: a list of more than 200 bottles built by beverage director Emily Nevin-Giannini, with about three-quarters of it priced under $75. That ratio is unusual in Denver and it changes how you order, since the sensible move is a bottle for the table rather than three glasses each. Weekends open at 11am, which makes this a daytime room as much as a night one.
