Justin Cucci's first restaurant, opened in 2008 in a converted 1950s service station, with the mid-century salvage and the odd eBay find still in place. The menu is seasonal and vegetable-forward without being a vegetarian restaurant, and weekend brunch, served 9:30 to 2, is the meal locals actually plan around. Dinner starts at 5, happy hour runs weekday afternoons at the bar. There is a second Root Down inside Denver International Airport, which is a strange sentence and a useful one.
